Banana & Yuca Vegetable Soup

Ingredients
  

  • 1 tablespoons olive oil extra virgin
  • 2 ripe bananas peeled and sliced
  • 1 medium yuca cassava, peeled and cubed
  • 2 medium tomatoes chopped
  • 2 medium carrots sliced
  • 2 tablespoons cooking oil such as avocado or olive oil
  • ½ teaspoon asafoetida hing
  • Salt to taste
  • ½ teaspoon ground black pepper
  • 2 cups fresh spinach leaves
  • 2 celery stalks chopped
  • 4 cups water add more if needed for desired consistency

  • 1 soup pot
  • 1 ladle for stirring
  • 1 cutting board
  • 1 sharp knife

Method
 

  1. Step 1 — Prepare the Ingredients
  2. Wash and peel the yuca, then cut into bite-sized cubes.
  3. Peel and slice bananas.
  4. Chop tomatoes, carrots, and celery.
  5. Wash spinach leaves thoroughly.
  6. Step 2 — Heat the Base
  7. Place the soup pot over medium heat.
  8. Add the oil, then stir in the asafoetida until aromatic (about 30 seconds).
  9. Step 3 — Cook the Vegetables
  10. Add chopped tomatoes, carrots, celery, and yuca to the pot.
  11. Season with salt and black pepper.
  12. Stir well and cook for 5–7 minutes to allow flavors to blend.
  13. Step 4 — Add Water & Simmer
  14. Pour in 4 cups of water, ensuring the vegetables are fully submerged.
  15. Bring to a boil, then reduce heat to low.
  16. Cover and simmer for 20–25 minutes, or until yuca is tender.
  17. Step 5 — Add Bananas & Spinach
  18. Gently stir in sliced bananas and fresh spinach leaves.
  19. Simmer for an additional 5 minutes, allowing the bananas to soften but not dissolve completely.
  20. Step 6 — Taste & Serve
  21. Adjust seasoning with more salt or pepper if needed.
  22. Serve hot with your favorite gluten-free bread or enjoy it as a light main course.
