Three Healthy Vegetarian Bread Fruit Recipes from One Fruit

Jackfruit has always been one of my favorite fruits. It’s incredibly versatile, naturally hearty, and perfect for creating healthy vegetarian and allergy-friendly meals. As I focus more on cooking for my family’s needs—especially food sensitivities—I’ve been experimenting with plant-based ingredients that are both nourishing and comforting.

Growing up with South American roots, jackfruit feels close to home. This tropical fruit, commonly found in Suriname and throughout the Caribbean and South America, can transform into savory, sweet, and satisfying dishes. To understand how my family felt about it, I decided to create three different breadfruit recipes using one whole fruit.

Ingredients
  

  • 1 ltr olive oil extra virgin
  • 1 Fresh bread fruit sliced into 1-inch thick pieces
  • Salt to taste
  • Crushed black pepper a pinch
  • Mudrood powder or mild spice blend, a dash
  • Jackfruit chunks
  • 1 tomato finely cubed
  • Juice of 1 dry coconut freshly squeezed
  • Coconut milk from the squeezed coconut
  • 1 teaspoon salt
  • Five-spice powder a pinch
  • Asafoetida hing, a pinch
  • Paprika powder a pinch
  • Steamed jackfruit pieces
  • Salt to taste
  • Light oil optional

Equipment

  • 1 cutting board
  • 1 sharp knife

  • 1 Medium saucepan or pot
  • 1 Steamer pot or steaming basket
  • 1 Small wok or frying pan
  • 1 Cooking spatula or wooden spoon
  • 1 Fine strainer or cheesecloth
  • 1 Ladle
  • 1 Serving bowls or plates

Method
 

  1. Slice the fresh breadfruit into thick 1-inch pieces. Add salt, black pepper, and a dash of mudroot powder. Mix gently to coat each slice evenly. Set aside and allow the flavors to absorb for about 20 minutes before serving or lightly sautéing if desired.
  2. Why it works: This simple seasoning highlights the bread fruit’s natural texture while keeping it light and allergy-friendly.
  3. n a pot, add breadfruit pieces and cubed tomato. Pour in fresh coconut milk and coconut juice. Add salt, five-spice powder, asafoetida, and paprika. Bring to a gentle boil, then reduce heat and simmer until the breadfruit is tender and the soup is aromatic.
  4. Why it works: Coconut milk adds richness without dairy, making this soup naturally vegan and soothing.
  5. Steam the jackfruit until soft. Lightly stir-fry in a pan with a small amount of oil and salt, or serve as-is for a clean, minimal dish.
  6. Why it works: Steaming keeps nutrients intact while offering a neutral base for seasoning.
