  • 1 cup cold unsalted Kerrygold butter, grated or cubed
  • 2 cups grated Gouda cheese
  • ½ teaspoon bell pepper, finely diced or ground, to taste
  • Mixing bowl or food processor
  • Box grater (for the cheese and, if using, the cold butter)
  • Piping bag with a large star tip, or a cookie press
  • Baking sheet
  • Parchment paper
  • Measuring cups and spoons

Method

In a large bowl or food processor, combine the flour, grated cold butter, grated Gouda, bell pepper, and salt. If using a food processor, pulse until the mixture looks like coarse crumbs. If mixing by hand, use your fingers to work the butter into the flour and cheese until it’s evenly distributed.

Continue mixing or pulsing just until the dough comes together into a cohesive mass. It should be firm enough to hold its shape but soft enough to pipe. Avoid overworking it , the less it’s handled, the more tender the sticks will be.

Fit a piping bag with a large star tip and fill it with the dough, or load the dough into a cookie press. Pipe 3 to 4-inch strips directly onto a parchment-lined baking sheet, leaving a little space between each one.

Bake at 375°F for 15–18 minutes, until the sticks are golden at the edges and firm to the touch.

Let the sticks cool on the baking sheet for about 10 minutes before transferring them to a wire rack. They firm up and crisp further as they cool, so don’t skip this step even if they look done right out of the oven.

Tip

Keep the butter cold. Cold butter is what gives these sticks their crisp, flaky texture, so work quickly and keep everything chilled until it goes in the oven.
Grate the cheese finely so it blends evenly into the dough instead of clumping.
No piping bag? No problem. Roll the dough out and cut it into strips with a knife or pizza cutter instead.
Adjust the bell pepper to taste ,a little goes a long way, and it’s there for flavor, not heat.

Storage

Store cooled cheese sticks in an airtight container at room temperature for up to 3 days, or freeze the baked sticks for up to 2 months. Re-crisp frozen sticks in a 350°F oven for a few minutes before serving.

FAQ

Can I use a different cheese? Yes,a firm, meltable cheese like cheddar or Gruyère works well in place of Gouda. Softer cheeses may make the dough too wet to pipe.

Why did my dough feel too soft to pipe? The butter or cheese may have warmed up too much while mixing. Chill the dough in the fridge for 15–20 minutes before piping if this happens.
